Summer is *almost* over. Although the weather here in Boston has been screaming fall this week… This makes me very sad. I do feel like I had a great summer, and I do love fall, but I’m not ready to think about what that means is coming next. Winter. Blech. Last winter was brutal, and I’m just not ready forĀ it. Hubby, on the other hand, can’t wait to bust out his snowboard…
As I’m clinging to these last few days and hours of summer, I’ve been eating as much summer produce as possible. This salad is a simple way to highlight some delicious watermelon. The peppery arugula and salty goat cheese provide a great contrast to the sweet juicy watermelon.
I didn’t actually follow a recipe here, I just threw things together.

Three Years Ago: Lime and Coconut Margarita Cupcakes and Squash and Turkey Lasagna
Yield: Serves 6-10
3-5 oz arugula
1/4 of a whole watermelon, cubed
1/4 cup balsamic vinegar
2-4 oz crumbled goat cheese
salt and pepper to taste
Arrange arugula on a serving platter.
Top with cubed watermelon.
Pour vinegar over watermelon and top with goat cheese.
Season with salt and pepper. Serve immediately.
