Blog Recap – Meat
As you know by now, my 2nd blogiversary is coming up on Friday! WOOHOO! I wanted to use this week leading up to my blogiversary to look back at my blog and how far I’ve come. Each day this week, I’ll be featuring some old posts from my blog that Hubby and I find ourselves going back to time and time again. I’m going to start with some meat dishes. These recipes come from my dinner (meat/poultry), appetizer, and breakfast tags.
Turkey Burgers – posted on Aug 30, 2007 – Hubby and I LOVE this recipe which comes from Joelen. I like to make a big batch when turkey is on sale and then freeze them for quick meals when we’re not in the mood to cook. Our favorite topping combo for these is avocado, tomato, and sprouts.
Stuffed Chicken – posted Nov 6, 2007 – Another versatile recipe, this chicken can be stuffed with just about anything. Although we do stick with spinach and goat cheese most often, I’ve also made it with roasted red pepper or mushrooms. The other great thing is that you can buy a bunch of chicken and stuff it, then throw it in the freezer for a quick meal later.
Bacon Wrapped Dates – posted Aug 1, 2008 – These little guys are amazing. I’ve made them tons of times since last August and everyone always loves them. I highly recommend these for any upcoming cookouts you have. I’ve made them up to two days in advance and just put them in the fridge then cooked them the day of. I’ve also cooked them at home and taken them somewhere to serve at room temp. They’re always awesome.
Summer Squash Turkey Lasagna – posted on Sept 24, 2008 – This lasagna is very healthy since there are no noodles and it uses ground turkey. We both really enjoy this and I made it multiple times last winter.
Boston Baked Beans – posted Nov 13, 2008 – Living in Boston, I had to make Boston baked beans at least once. They require little work thanks to the crockpot and have a great bacon-y but still sweet taste. I need to make these again soon.
Crockpot Beef and Peppers – posted Feb 24, 2009 – My step-mom gave made this one time when we were home and we both really enjoyed it. I also made this on a ski weekend with a large group and it was a hit.
Crustless Quiche – posted on March 3, 2009 – Making a quiche without crust takes out a decent amount of the calories and fat (of course serving this with cinnamon rolls like I did doesn’t help that cause). This is another recipe you could just throw in whatever you have on hand.
Turkey Chili – posted on June 2, 2009 – I had made this chili multiple times before it finally made it into the blog and it’s awesome every time. I like to throw in various vegetables that we love. Butternut squash is amazing in this chili. I made two big batches of this chili prior to our kitchen renovation.
Breakfast Pizza – posted July 30, 2009 – I like to mix things up on the weekends. Eggs on pizza is an amazing idea. You could make this with any toppings you want. I just used what I had in the house that day.
Crockpot Chicken Tacos – posted on August 5, 2009 – Man, I wish I had tried this recipe sooner. We love using our crockpot, especially in the summertime. That way you don’t have to heat up the kitchen to have a hot meal on the table. We ate off this recipe for a few days.
