Blog Recap – Seafood, Sides, and Other
For my third days of recaps, I bring you a collection of seafood meals, side dishes and other non-meat, non-sweet things that I’ve made over the past two years.
Bruschetta – posted Sept 18, 2007 – This bruschetta recipe comes from my stepmom. I love that it has goat cheese in it! We make this all the time now using whatever we have on hand.
Banana Blueberry Muffins – posted Oct 13, 2007 – Blueberries and banana go really well together. These muffins are healthy and hearty. I like to make a double batch and then freeze them. Then Hubby and I each grab one on the way out the door and by the time we get to work, they’re ready to eat.
Gnocchi with Shrimp, Asparagus, and Pesto – posted Nov 3, 2007 – Hubby and I make this once or twice a month. Every month. It’s so easy to make and is a great combo of flavors. We keep frozen gnocchi and shrimp on hand specifically for this meal.
Cranberry Applesauce – posted Nov 28, 2007 – I can’t remember the first time I made applesauce. Or why I decided to add cranberries to it. But whatever the reason, I’m sure glad I did. I like to mix up a batch of this on the weekend. Some weeks it doesn’t last until Tuesday. Hubby really likes it.
Soft Pretzels – posted Dec 9, 2007 – These soft pretzels helped make me known for my baking. I brought them to our first beirut league finals, and they’re always requestede each season. They’re another example of how this blog has helped me gain confidence using yeast. Hubby likes to help by forming the pretzels while I do the boiling/baking. It’s a fun project to do together.
Brie Bites – posted Dec 17, 2007 – These appetizers are so versatile and fancy. People think you spent a long time on them, but they come together in a snap. I especially like using the spreadable brie. You can top them with almost anything.
Perfect Summer Salsa – posted April 27, 2008 – I make this dip/salsa all the time. It has a great flavor combo that everyone loves. I’ve even mixed it up to searve as a side. You can even taylor it based on what you like and what you have on hand. But don’t forget the avocado, it really takes this dip up a notch.
Roasted Red Pepper Hummus – posted April 28, 2008 – Hubby and I both really like hummus. I had no idea it was so easy to make. The hardest part is just finding tahini in the grocery store!
Peppery Lemon Brown Sugar Salmon – posted Oct 16, 2008 – We eat a lot of salmon. It’s just such a versatile fish. The combination of the lemon pepper and the brown sugar is amazing on salmon. This recipe has become on of our weeknight go-to meals.
Salmon with Yellow Pepper Cilantro Pesto – posted July 22, 2009 – The combination of the spicey rub and the cilantro pesto on this fish is amazing. So freaking good! I like to freeze the leftover cilantro in an ice cube tray to use later. We really enjoy to toss some shrimp in some Old Bay seasoning, grill it up, then toss it with the cilantro pesto ice cubes for a great weeknight meal.
