5 of my Favorite Pink Treats

Roasted Beet Hummus – Roasted beets really brighten up this hummus recipe. And they provide a subtle earthy sweetness. Hubby and I served this at a get together with friends and it was the talk of the party.

Chocolate M&M Cookies – M&M cookies are such a classic treat. These use a brownie-like batter instead of a sugar cookie base and have M&Ms on the outside AND the inside.

White Chocolate Cranberry Mousse – White chocolate and orange zest help to mellow out the tartness of the cranberries in this mousse. It is delicate and fluffy and tastes like fall.

Mashed Sweet Potatoes with Beets – Another case of beets making something BRIGHT pink. Here the beets are mixed into mashed sweet potatoes. The sauteed scallions on top provide a punch of savory to this sweet veggie mash.

Berry Cream Cheese – Berries and cream cheese make a lot of sense. This super simple recipe combines the two for use on your favorite bagel.

    I made this tonight and it was truly one of the worse things I’ve made; the sauce was really chunky and dry, and stuck in my throat every time I took a bite, and the garlic made it even drier. I would not recommend this to anyone.

    This is very good. Leaving some of the pasta water is important, as well as adding the olive oil. Grating the beet into the pasta made a gorgeous colored magenta. Eating pasta right away prevents drying out. An optional addition could be adding a can of coconut milk to make a pink saucy dish. Topped with nuts and cheese, yes!
